Purple Sweet Potato Red

Purple sweet potato red pigment is a food colorant extracted from plants of the Ipomoea genus in the Convolvulaceae family, composed of anthocyanins and flavonoids.

This product appears as a purplish-red liquid or powder, easily soluble in water and aqueous ethanol solutions, but insoluble in fats and anhydrous ethanol.

Its hue and stability are influenced by pH: it exhibits a stable red or purplish-red color in acidic conditions; appears blue in neutral conditions;

and turns into an unstable green in alkaline conditions.

Application scope: Suitable for coloring prepared wines, carbonated beverages, fruit juice (flavored) drinks, jams, candies, etc.
