Chemical Properties
Pale yellow to yellow oily liquid with a strong, fresh, melon-like fragrance. Not very stable. Flash point 62°C, boiling point 116–124°C (13.3 kPa). Soluble in ethanol, propylene glycol, and non-volatile oils; insoluble in glycerin and water.
Uses
Approved as a permitted food flavoring by GB2760-96. Mainly used in formulating melon, cucumber, and tropical fruit flavorings.
