Properties: White to pale yellow powder, slight odor, forms a viscous liquid when heated, easily disperses in cold water and swells, but requires heating (approximately 20-30 minutes) to achieve maximum viscosity, with good salt, acid, and heat resistance.
Limit: Ice cream, jelly <2g/kg. Reference dosage: Candy 0.004%, sponge cake 0.1%, ice cream 0.05%, jelly 0.2%.
