Physical and Chemical Properties: VitaminB1, also known as thiamine or antineuritic factor, is a B vitamin composed of a pyrimidine ring and a thiazole ring. It appears as white crystals or crystalline powder; has a faint characteristic odor, tastes bitter, and is hygroscopic. When exposed to air, it easily absorbs moisture. It decomposes readily in alkaline solutions. It can withstand temperatures up to 100 degrees Celsius at a pH of 3.5, but is prone to degradation at pH levels above 5. Its potency decreases with exposure to light and heat. Therefore, it should be stored in a cool, dark place and not kept for extended periods. It is very stable in acidic solutions but unstable in alkaline solutions, where it is easily oxidized and destroyed by heat.

Product Uses: Suitable for vitaminB1 deficiency, it maintains normal carbohydrate metabolism and nerve conduction. It is also used as an adjunct treatment for indigestion and neuritis. As a nutritional supplement, it can be added to white rice, wheat flour, bread, noodles, soy sauce, dairy products, margarine, pastries, soft drinks, jams, and other foods. Because it is water-soluble and easily decomposes in alkaline conditions, significant losses occur during food processing and cooking, and it may produce off-flavors. Therefore, other derivatives of thiamine should be prioritized based on the food form.
