Physical and Chemical Properties:
Erythorbic acid is a stereoisomer of vitamin C, thus sharing similar chemical properties with vitamin C.
Erythorbic acid appears as white to light yellow crystals or crystalline powder, odorless, with a sour taste. It melts at 166~172°C with decomposition and gradually darkens upon exposure to light. In its dry state, it is relatively stable in air, but deteriorates rapidly when exposed to the atmosphere in solution. It has almost no physiological activity of ascorbic acid, but its antioxidant properties are superior to those of ascorbic acid. However, it has poor heat resistance and strong reducing power. Heavy metal ions can promote its decomposition. Erythorbic acid is highly soluble in water (40g/100ml), soluble in ethanol (5g/100ml), slightly soluble in glycerol, and insoluble in ether and benzene. The pH of a 1% aqueous solution is 2.8.
Applications:
Antioxidant Properties: The antioxidant capacity of erythorbic acid far exceeds that of vitamin C. It does not enhance vitamin C activity but does not hinder the absorption and utilization of ascorbic acid by the human body. When ingested, erythorbic acid can be converted into vitamin C in the body.
The physiological effects of erythorbic acid in terms of anti-scurvy activity are only 1/20 that of ascorbic acid. However, its effects in lowering blood pressure, diuresis, liver glycogen generation, pigment excretion, and detoxification are roughly similar to those of ascorbic acid.
Erythorbic acid is primarily used in the food industry as an antioxidant. It is widely applied in meat products, fish products, beer, fruit juices, juice crystals, canned fruits and vegetables, pastries, dairy products, jams, wine, pickles, oils, and fats.
