Properties: Sodium saccharin, also known as soluble saccharin, is the sodium salt of saccharin, containing two water of crystallization, colorless crystals or slightly white crystalline powder, usually containing two water of crystallization, easily loses water of crystallization to become anhydrous saccharin, appearing as white powder, odorless or with slight aroma, intensely sweet with bitterness. Sweetness is about 500 times that of sucrose. Weak resistance to heat and alkali, sweetness gradually disappears when heated under acidic conditions, solutions above 0.026 % taste bitter.
