Properties: White monoclinic crystals or crystalline powder; when recrystallized from ethanol aqueous solution, it appears as colorless plate-like or flaky crystals. Odorless with a characteristic bitter taste. Melting point approximately 315°C. The pH of a 5% aqueous solution is 5.5-7.0. Stable to heat, light, and air. Highly soluble in water (8.85g/100ml, 25°C), almost insoluble in ethanol and ether. Difficult to separate from leucine.

Uses: L-Valine is an essential amino acid for humans and one of the three branched-chain amino acids. Due to its unique structure and function, it holds a particularly important position in human metabolic processes. Also used in food fortification, etc.
