Physical properties: White odorless crystalline powder. Has a special sweet taste, with sweetness approximately 70% of sucrose. Sublimates above 200°C, melting point 297°C (decomposition). Chemically stable, easily soluble in water (17% at 25°C).
Slightly soluble in ethanol, insoluble in ether. pH of 5% aqueous solution is 5.5~7.0.
Usage: Used in food and beverages as a preservative, flavor enhancer, and for amino acid low-alcohol beverages.
