1. Sodium propionate is a liquid acidic preservative, and its antibacterial effect is influenced by the environmental pH. The minimum inhibitory concentration is 0.01% at pH 5.0 and 0.5% at pH 6.5. In acidic media, it strongly inhibits various molds, aerobic bacilli, or Gram-negative bacteria. It is particularly effective in preventing the production of aflatoxins but is almost ineffective against yeast. Additionally, it is used as a food preservative.
2. In leather tanning, it is used as a masking agent to improve the alkali resistance of leather and the uniformity of tanning.[4]
3. Sodium propionate is also an acidic food preservative, and its antibacterial effect is influenced by the environmental pH. The minimum inhibitory concentration is 0.01% at pH 5.0 and 0.5% at pH 6.5. In acidic media, it strongly inhibits various molds, Gram-negative bacteria, or aerobic bacilli. It is particularly effective in preventing the production of aflatoxins but is almost ineffective against yeast. In the food industry, it can be used for preserving pastries, with a usage amount of 2.5g/kg (calculated as propionic acid, the same below); the maximum usage amount for soaking bayberries in a 3%–5% aqueous solution is 50g/kg. It can also be used as an antimold agent for feed.

5. Cosmetic preservative. It has broad-spectrum antibacterial effects against molds, yeasts, and bacteria. Its antibacterial effect is particularly pronounced in acidic media. The addition amount in cosmetics is usually no more than 2%. Pesticide, antimold agent. Used for determining transaminase. In leather tanning, it is used as a masking agent to improve the alkali resistance of leather and the uniformity of tanning.
