Levulinic acid is an organic compound with the molecular formula C5H8O3. It is soluble in water and some organic solvents, but insoluble in gasoline, kerosene, turpentine, etc. It hardly decomposes under atmospheric distillation; prolonged heating causes dehydration, forming unsaturated γ-lactone.
