The main body of the vacuum dough mixer is made of high-quality stainless steel. It mainly consists of a frame, body, mixing tank, mixing tank cover, hydraulic power system, mechanical transmission part, vacuum part, and electronic control part. Using vacuum technology for mixing, the dough has a higher water content, generally around 40%, which is 10% to 20% higher than conventional mixing techniques, significantly improving dough quality and promoting the formation of a protein network structure.
Due to its short mixing time and low rotation speed, the vacuum dough mixer reduces the temperature rise of the dough, keeping the dough temperature generally below 32 degrees Celsius, making it less likely to stick to the rollers during sheeting. The practical effects of vacuum dough mixing technology in flour product production (compared to conventional mixing techniques) are most evident.
Mixing Blade Classification:
Paddle Type: Suitable for flour products such as dumplings, steamed buns, wontons, stewed noodles, and hand-pulled noodles, resulting in small, broken dough pieces.
Spiked Club Type: Suitable for semi-dry noodles, ramen, fresh noodles, fried instant noodles, and other flour products, resulting in fine, flaky dough particles.
