Properties: White powder, melting point 622°C, easily soluble in water, has significant chelating ability for metal ions such as calcium and magnesium, can soften hard water, turn suspensions into solutions, weakly alkaline, non-corrosive, is an inorganic surfactant, and has strong emulsifying effects on lubricants and fats.
VI. Uses: In the food industry, it is used as a quality improver for canned goods, fruit juice beverages, dairy products, soy milk, etc. Mainly used for tenderizing canned ham, softening the skin of beans in canned broad beans, and can also be used as a softener and thickener.
