IV. Properties: White or slightly yellow crystalline granules or crystalline powder, odorless, salty taste, cool, deliquescent, easily soluble in water or glycerol, almost insoluble in ethanol. Relative density 1.98. Melts and decomposes when heated to 230°C.

V. This product should be stored sealed in a dry and ventilated warehouse, protected from moisture and heat, stored separately from harmful and toxic substances, and handled with care during transportation and loading/unloading to prevent packaging damage.

In the food industry, it is used as a buffer, chelating agent, stabilizer, antioxidant, emulsifier, flavoring agent, etc. It can be used in milk and dairy products, jelly, jam, meat, canned hydrogel desserts, and also for cheese emulsification and citrus preservation. In the pharmaceutical industry, it is used for hypokalemia, potassium deficiency, and urine alkalinization.
