Molecular weight: 176.12
Properties: White powder, highly hygroscopic, loses all water content above 150°C, decomposes into acetone and calcium carbonate at 160°C. Soluble in water, slightly soluble in ethanol. pH of 0.2M solution is 7.6.
Uses: Analytical reagent. Preparation of acetic acid and acetone, food stabilizer, nutritional enhancer, pH regulator, chelating agent, mold inhibitor, buffer, preservative, etc.
