SAIB is the abbreviation for Sucrose Acetate Isobutyrate, a high-purity liquid fatty acid sucrose ester. Pure SAIB is a highly viscous transparent liquid with a light color. SAIB is a sugar derivative produced by esterification of food-grade sucrose with acetic anhydride and isobutyric anhydride, forming a mixture of all possible combined ester forms with an acetate to isobutyrate ratio of approximately 2:6, hence also known as sucrose diacetate hexaisobutyrate. Sucrose acetate isobutyrate exhibits excellent emulsifying, dispersing, and adhesive properties, making it widely useful in industries such as food, papermaking, and daily chemicals.
SAIB is a viscous liquid with low color (Gardner color <1), no taste, no odor, and good thermal stability. Due to its high specific gravity, neutral odor, taste, color, and solubility in oil-based flavors, it is used as a food additive in over 70 countries worldwide.
SAIB is commonly used as a food flavor auxiliary, such as a stabilizer or weighting agent; a clouding agent in non-alcoholic beverages to prevent "ringing," "creaming," and "separation"; it has lipid-like properties and can be used to adjust the density of the oil phase; SAIB serves as a weighting agent, stabilizer, and emulsifier, making it suitable for use in emulsified flavors.
Due to its low volatility, resistance to hydrolysis and discoloration, and non-toxicity, SAIB has been used for many years as a density or weight regulator in carbonated and non-carbonated beverages. Its neutral taste does not affect the flavor of beverages. SAIB also offers excellent oxidative stability and low caloric value, with a caloric value of 400 kcal/100g.
Due to its excellent physical and chemical properties, SAIB has even broader applications in industry.
SAIB's refractive index is close to that of cellulose, enhancing paper's stability to heat and light, improving printability, and making it suitable for producing transparent paper.
