Sodium metabisulfite

Properties: White or slightly yellow crystalline powder with a strong SO2 odor, relative density 1.4, easily soluble in water and glycerol. The aqueous solution is acidic, and solubility increases with rising temperature. Slightly soluble in ethanol. When exposed to air, it oxidizes and deteriorates easily, continuously releasing SO2, eventually converting the product into sodium sulfate. Therefore, this product should not be stored for long periods. It decomposes when heated to 150°C.

Applications:
(1) Food Grade: Bleaching agent (e.g., candies, pastries, dried magnolia slices); Leavening agent (e.g., bread, biscuits); Preservative and bactericide (e.g., fruit juices, canned foods, brewing, grain storage); Antioxidant and freshening agent (e.g., daylily buds, seafood, fruits and vegetables).
