[Properties] Commonly known as nitrite, it is an inorganic salt formed by the combination of nitrite ions and sodium ions. It is deliquescent, easily soluble in water and liquid ammonia, with an alkaline aqueous solution (pH ≈ 9), and slightly soluble in organic solvents such as ethanol and methanol. It has a salty taste and is sometimes used to make counterfeit table salt. It reacts with oxygen in the air. When heated above 320°C, it decomposes to produce oxygen, nitrogen oxide, and sodium oxide. It is prone to combustion upon contact with organic matter. When used to preserve the color of meat products by reacting with myoglobin and hemoglobin to form bright red nitroso-myoglobin or nitroso-hemoglobin, it also imparts a distinctive cured meat flavor.
[Applications] Used as a bleaching agent for silk and linen, a metal heat treatment agent, a steel corrosion inhibitor, an antidote for poisoning, a laboratory analytical reagent, and as a color fixative, antimicrobial agent, and preservative in meat product processing. It is also applied in bleaching, electroplating, and metal treatment, and is referred to as industrial salt.
