Corn oligopeptide is a new resource food approved by the Ministry of Health. It is a small molecule polypeptide extracted from corn protein using bioengineering-directed enzymatic cleavage technology. Corn protein is a by-product of the deep processing of corn, containing approximately 60% protein, mainly composed of zein, glutelin, and globulin. Due to its complex composition, coarse texture, and extremely poor water solubility, corn protein's application in the food industry is severely limited.
