L-Glutamic acid is a white crystalline powder, almost odorless, with a special taste and sourness. Decomposes at 224°C to 225°C. The pH of a saturated aqueous solution is about 3.2. Slightly soluble in water, practically insoluble in ethanol, and very soluble in formic acid. Solubility (g/100g water): 0.72 (20°C), 1.51 (40°C), 3.17 (60°C), 6.66 (80°C).
[Product Functions]
1. L-Glutamic acid in the food industry: Used as a salt substitute, nutritional supplement, and umami enhancer (mainly for meat, soups, poultry, etc.). For example, used in broths and soups for instant foods at 10g/kg. Used in beverages, baked goods, meat, sausages, dairy products, seasonings, and cereal products at 400mg/kg. As a nutritional supplement, the limit is 12.4% (based on the total protein content in the food). Can be used as a preventive agent for magnesium ammonium phosphate crystallization in canned seafood such as shrimp and crab, at 0.3% to 1.6%. Monosodium L-glutamate (MSG, commonly known as "monosodium glutamate") has a strong meaty umami and is a widely used seasoning besides sugar and salt. Especially at pH 6–7, MSG fully dissociates, exhibiting strong flavor. Widely used in cooking and food processing. General usage is 0.2% to 0.5%. The allowable daily intake per person should not exceed 6g/d. L-Glutamic acid salts are used to improve the bitterness of beer and can also serve as salt substitutes, nutritional supplements, and flavor enhancers.
2. In industry: L-Glutamic acid is a non-essential amino acid that is metabolized in the body. It easily loses its amino group, undergoes transamination reactions with keto acids, and can synthesize other amino acids. After consumption, 96% of L-glutamic acid is absorbed by the body, making it suitable as a nutritional supplement.
L-Glutamic acid in agriculture: Reduces nitrate content in crops; improves seed germination, promotes leaf photosynthesis, and increases chlorophyll biosynthesis.
