Soluble in alkaline aqueous solutions, soluble in concentrated hydrochloric acid with a light purple color, almost insoluble in water and non-polar organic solvents. Rapidly swells when immersed in water, but particles do not aggregate. Relative density 1.25–1.31. Isoelectric point pI 4.7.
Uses: Biochemical research. Raw material for culture media.
