1. Structural Composition: Consists of an automatically tilting basket (pot liner) and a jacketed pot body. The basket is typically made of perforated stainless steel, with hole sizes customizable based on the characteristics of different ingredients. For example, fine-hole baskets are suitable for small items like braised chicken feet, while large-hole baskets are ideal for bigger items like beef shank, ensuring even heating and easy separation of ingredients from the broth during discharge. The pot body commonly features a double-layered structure with inner and outer spherical layers, where the intermediate jacket can be filled with steam or thermal oil for heating.
