Papain is a product extracted by bioengineering technique from the unripe papaya (pawpaw). It's natural and safe. The term papain is applied both to the Crude enzyme preparation from papaya latex and one of the distinet protease fractions. Papain is has the activity of protease and esterase. Papain has a rather broad specificity. Not only it hydrolyze animal and plant proteins, peptides esters and amides, but also it synthesizes the amino acids into plasteins.
