Properties:  White powder, odorless and tasteless, extremely hygroscopic. Dissolves in water to form a highly viscous transparent liquid. Viscosity is 15-20 times that of sodium carboxymethyl cellulose (CMC) and sodium alginate. Viscosity increases under alkaline conditions; long-term storage shows little change in viscosity, and it is not prone to spoilage.
