Polyglycerol fatty acid esters are a novel and highly efficient type of non-ionic surfactant. They are synthesized through the esterification of natural glycerol and fatty acids under high temperatures and can be widely applied in cosmetics, food, pharmaceuticals, and other fields. They primarily serve as emulsifiers, stabilizers, dispersants, thickeners, antifoaming agents, quality improvers, fat crystallization regulators, chocolate consistency adjusters, and bactericides. Their most notable characteristic is their remarkable stability under acidic conditions, as well as excellent heat resistance, with low susceptibility to hydrolysis.
