Properties:
White powder, easily soluble in water, insoluble in alcohol, relative density 2.45, melting point 890°C. Aqueous solution is weakly alkaline, easily deliquescent in air. The aqueous solution is relatively stable at 70°C, but hydrolyzes to disodium hydrogen phosphate upon boiling.
Applications:
(1) Industrial use: as a detergent aid, paper bleaching, electroplating industry; (2) In food processing, used as a quality improver, emulsifying dispersant, buffer, chelating agent, etc. It has the general properties of condensed phosphates, with significant chelating and dispersing effects, and can prevent flocculation. It helps prevent fat oxidation and increases the viscosity of casein. At high pH, it inhibits food spoilage and fermentation. Mainly used in meat and aquatic product processing to improve water retention, maintain meat tenderness, and stabilize natural pigments. It can also be used in starch production, often in combination with other condensed phosphates. The general addition amount in food processing is 0.5-3‰, with a maximum addition of 3% in aquatic product processing.
