Properties:

Anhydrous potassium pyrophosphate is a white powder with a relative density of 2.534 and a melting point of 1109°C. It is hygroscopic and deliquescent, easily soluble in water but insoluble in ethanol. At 25°C, 187g dissolves in 100g of water. It can chelate with alkaline earth metal and heavy metal ions.

Applications:

(1) In industry, it is mainly used for cyanide-free electroplating, industrial and household detergents, as a buffer reagent, and as a dispersant for ceramics, clay, latex, pigments, etc.; (2) In the food industry, it is used as an emulsifier, tissue improver, and chelating agent. It is also used as a raw material for alkaline water in flour products and in combination with other condensed phosphates. It is commonly used to prevent struvite formation in canned aquatic products, prevent discoloration of canned fruits, increase the expansion of ice cream, improve the yield of ham and sausages and the water retention of surimi, enhance the taste of noodles and increase yield, and prevent cheese aging. The addition amounts in food processing are: processed cheese at 9g/kg (calculated as phosphorus); luncheon meat at 3g/kg (calculated as P₂O₅); quick-frozen shrimp at 5g/kg (calculated as P₂O₅).
