Properties:

Anhydrous or monohydrate compound. White powder or granules, relative density 2.564, easily soluble in water (51g/100ml, 25°C), insoluble in ethanol. The pH of a 1% aqueous solution is approximately 11.5.

Applications:

Emulsifier; potassium fortifier; alkaline water for pasta products; seasoning; meat binder; buffer; antioxidant synergist; chelating agent. Used in meat products, non-carbonated beverages, fruit and vegetable peeling, low-concentrated milk, sweetened condensed milk, cream, cream powder, milk powder, processed cheese, etc.
