Properties:

The dodecahydrate is a white crystalline solid with a relative density of 1.52. It is prone to efflorescence, melts at 35°C and loses 5 molecules of water of crystallization, turns into the anhydrous form at 100°C, and converts to sodium pyrophosphate at 250°C. The anhydrous form is a white powder that is hygroscopic. Both are readily soluble in water, yielding a weakly alkaline solution, and insoluble in alcohol.

Applications:

(1) Industrial: Dodecahydrate disodium hydrogen phosphate is used as a water softener in boilers, a flame retardant for textiles, wood, and paper, in the production of detergents, as a glaze and flux, as a stabilizer for bleaching in dyeing and printing, as a culture agent for monosodium glutamate, erythromycin, penicillin, streptomycin, and in biochemical wastewater treatment products, and in electroplating. Anhydrous disodium hydrogen phosphate is used as a flame retardant, a weighting agent for silk, an auxiliary for reactive dyes, and as a substitute for borax in welding and brazing. (2) In the food industry, it is used as a quality improver, pH regulator, nutritional supplement, emulsifying dispersant, fermentation aid, binding agent, etc. It is mainly used in pasta products, soy milk products, dairy products, meat products, cheese, beverages, fruits, ice cream, and tomato sauce. The addition rate in food processing is 3-5‰.
